Mango pudding

I have been craving for some mangoes...

and off I went to the supermarket and bought like half a dozen of thai mangoes.

And then before I head to the checkout counter, I thought, why not make some mango pudding! It's simple enough to make. There I was walking the aisles again to shop for extras. You will need:

300g water (that's about a large bowl)
100g sugar
35g gelatine or less (that's usually a whole bottle)
A box of cream (that's 200g/250g)
A few spoons full of evaporated milk to serve


Peel and de-seed about 4 mangoes (pulp). It doesn't matter how many as long as it's mangoey. Yumm!
Tip: Very ripe mangoes are good buys because they are very sweet (and cheap)


Prepare to puree it in a blender with a bit of water. I feel like gulping down the whole bowl!
Double tip: Blend with ice water and add syrup. Fresh mango juice, anyone?


Cube about 3 halves mangoes for texture

Let the easy task begin!

Boil the (big) bowl of water and dissolve the sugar and the gelatine under low heat. Then add the whole box of cream, the puree and the mango cubes.

Easy as 1,2,3!
Tip: You may want to add a small cube of butter and a pack of coconut milk for a richer and smoother texture. I skipped that because I was "fat" conscious. Haha!


Put them into shaped moulds. Makes 7 puddings. See those mango cubes?


Serve chilled with evaporated milk, if you wish. I couldn't wait to dig in but I really should remove it from the mould upside-down and drizzle evaporated milk on top like snowy mountains.

Update: Ok ok. I did it properly for the blog.

wonderful - try leaving the cube mango in the mould or drop them in the mould after pouring the pudding mixture. That looks so delish.........can i have some to taste ?
