Cucumber is known to be a cooling vegetable but once you add meat with it (in this case, the soup), it becomes soothing and nourishing (yun).
Soup base:
Pork ribs or pork bones
Ingredients:
2 cucumbers, deskinned and deseeded
a handful of goji seeds (gei ji)
a handful of red dates a few pieces of yuk chuk (Solomon's Seal Rhizome)
salt to taste
Optional: 1-2 pieces of dried oyster
Boil for 3 hours and wala!
