"Yong" basically means "stuffed". This cuisine is famously known as "yong tau fu" which basically means a piece of tofu stuffed with ground meat mixture or fish paste. For me, my favourite is the yong ngai kua (stuffed egg plant) and yong foo kua (stuffed bitter gourd). Can be eaten plain fried with a dip or boiled served in soup. I like it cooked in all ways. And since I didn't stuff any tofu, I have decided not to name this post "yong tau fu".
My version of my favourite yong in fish paste, plain fried for lunch today.
